These cookies have a soft and chewy center filled with a sugary cornflake crunch, with an added flavor of delicate white chocolate, all encased in a milk chocolate frame. They make a perfect snack option, and are beautiful as a gift to a person you love (or for yourself!).
Ingredients
200g butter, softened
1 1/3 cups of brown sugar
2 eggs
1 teaspoon of vanilla
1 1/3 cup of flour
1/4 cup of cocoa powder
1 ½ teaspoon baking powder
1/2 teaspoon bicarbonate of soda
1 ½ cups Frosties cornflakes (partially crushed with your hands)
50 g coarsely chopped white chocolate
150g semi-sweet chocolate chips
Pinch of salt
Directions
In a bowl, mix together the dry ingredients (flour, baking powder, baking soda, salt and cocoa powder) and set aside.
In another bowl, cream the butter and sugar in a stand mixer, or with a handheld mixer, until light and fluffy.
Add the eggs one at a time to the mixture, while continuing to mix.
Add the vanilla and keep mixing on medium high for about 8-9 minutes, making sure to scrape down the sides of the bowl.
Then on low speed, add the dry ingredients to the wet ingredients and increase the speed a little bit so the ingredients are well incorporated.
Add the milk chocolate chips, white chocolate pieces, and cornflakes, and mix using a spatula.
Cover the bowl and let it chill in the fridge for an hour.
Halfway through, preheat the oven to 175C.
When ready, scoop the cookie dough using a tablespoon or an ice cream scoop onto parchment lined baking sheets and bake each batch for about 12 minutes.
Remove from the oven and allow the cookies to cool on a wire rack.
