En Papillote is the method of cooking food in an envelope or parcel. The result from this method of cooking is an extremely tender and juicy meal. Your guests will love these parcels. Hand each one their own parcel and allow them to take in the beautiful smell of the shrimp as they begin to unfold these little savoury treats.
(Makes 7 servings)
Ingredients
Prawns and Marinade:
500g prawns, cleaned and deveined
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon fish sauce
1 clove garlic, minced
1 green chili, chopped
1 piece ginger, thumb-sized, minced
Parcels:
1/4 cup of bean sprouts
1/2 cup of Edamame beans
2 stalks green onion
1 teaspoon toasted sesame seeds
Directions
To prepare the prawns:
In a bowl, place the prawns and the marinade ingredients together and toss until the prawns are fully coated.
Cover with plastic wrap and allow them to marinate for at least 1 hour in the fridge (preferably overnight).
When the prawns are done marinating, take them out of the fridge.
To assemble:
Preheat the oven to 200C.
Cut out 7 large squares of parchment paper.
In the middle of each square, place around 2 prawns, bean sprouts, Edamame beans, green onions and sesame seeds. Make sure that each parcel has the same amount of prawns and greens.
Fold up the sides of the parchment paper and tie with cooking string.
Place all the parcels on a baking tray and bake in the oven for 10-12 minutes.
Remove from the oven and serve the parcels closed.
