A great addition to any meal, these open-faced baguette sandwiches, also called tartines, are easy to whip up and require basically no work at all. They're refreshing, light and very delicious. A simple breakfast, a healthy lunch or a light dinner. Your choice!
Ingredients
6 slices of French baguette bread (I use homemade, but you can definitely buy your own)
6 slices of Buffalo mozzarella cheese
4 cherry tomatoes, sliced in half
4 yellow cherry tomatoes, sliced in half
6 basil leaves
Olive oil
Balsamic vinegar
Salt & pepper
Directions
Place the baguette slices on a serving plate and drizzle with olive oil.
Toast the baguettes lightly on a grill or a saucepan. Remove and set aside.
Place a slice of mozzarella on top of each baguette slice.
In a small saucepan, pour in about 2 teaspoons of olive oil and allow to heat.
When the oil is slightly hot, throw the tomatoes in the pan and sear them for about 3 minutes.
Season with salt and pepper and add a teaspoon of balsamic vinegar.
Cook them for 10 more seconds then remove from the heat.
Place about 3 sliced tomatoes on top of each mozzarella slice.
Finish off with basil leaves, a dash of salt & pepper, and a drizzle of olive oil.
