This weekend, why not have dessert for breakfast? This French Toast recipe with caramelized bananas is the ultimate indulgence for breakfast or brunch. It's wonderful to plate for friends and family. The French Toast is soft and warm and the bananas are caramelized to perfection.

French Toast with Caramelized Bananas
Serves 2


French Toast:

4 pieces of toast
2 eggs
1/2 cup milk
1 tablespoon caster sugar
Small pinch of cinnamon

Caramelized Bananas:

1/2 cup brown sugar
2 tablespoons water
2 tablespoons water
2 bananas sliced lengthways


To make the caramelized bananas:

Begin by making the caramel.

Heat a skillet or pan on high heat. When hot, add the sugar and water and allow it to caramelize, then add the butter and let it melt. (If it gets too hot, reduce the heat to avoid burning the sugar)

Next, add the bananas and let them get coated in the syrup. Leave for a couple of minutes until they become caramelized.

To make the French Toast:

Place a skillet on high heat and brush lightly with butter.

In a bowl, mix the eggs, milk, sugar and cinnamon then pour into a slightly deep dish or bowl.

Dip the toasts in the egg mixture and turn them both sides so they can absorb the liquid and get fully coated.

Place on the skillet, turning them on both sides until they're slightly browned.

To assemble:

Place one piece of toast on a plate and drizzle a generous amount of caramelized bananas on top.

Then place another piece of toast on top and drizzle with a little more caramel and bananas.

Do the same with the other two pieces of toast.

Note: If the caramelized bananas have cooled when you reach time for assembly, return to the heat for a couple of minutes to make them warm.
